Oooey-Gooey Double Chocolate Chip Cookies

WOW! It has been a long time since I posted a recipe. I am telling you now... If you are in high school and are considering to take the IB diploma - DON'T! The amount of free time that you have is miniscule! Or... it could just be me... But after experiencing a pool of tests this month, I decided to relax and make my favourite oooey-gooey double chocolate chip cookies!

Oooey-Gooey Double Chocolate Chip Cookies

[Makes 20 cookies]

Ingredients:

140g butter, at room temperature

2/3 cup white sugar

1/3 cup brown sugar

1 large egg

1 1/2 tsp vanilla extract

1 cup all-purpose flour

1/2 cups cocoa powder

1/2 tsp salt

1 tsp baking soda

3/4 cups semi-sweet chocolate chips (I used Hershey's)

3/4 cups white chocolate chips (I used Hershey's)

To begin, soften the 140 g of butter in a large mixing bowl.

Add both the 1/3 cups of brown and 2/3 cups of white sugar to the bowl.

Using an electric mixer, cream the butter and sugars together until they combine and become fluffy.

Crack the egg into the bowl and mix again.

Follow this by adding the 1 1/2 teaspoons of vanilla extract. Mix one last time.

Sift the dry ingredients - 1 cups of flour, 1/2 cups of cocoa powder, 1/2 teaspoons of salt, and 1 teaspoon of baking powder - using a sifter.

Add the sifted dry ingredients to the creamed butter a little at a time. (But unlike me, aim for the bowl!). Mix until just combined.

Mix together the semi-sweet and white chocolate chips, but reserve a handful of white chocolate chips to be used for later.

Gently blend the chocolate chips in with the batter mix.

Scoop the batter using a cookie scoop onto a baking tray (but you can cheat and use an ice scream scoop - like me!) then top each cookie scoop with about 3 white chocolate chips.

Bake the cookies for 11 minutes in an oven of 175°C, until the cookies are still soft and chewy, but not well-done. Allow them to cook on a wire rack for 10 minutes.

Now, serve these either with a cup of cold milk, ice cream, or just eat them on their own! whatever you do, I guarantee that a bite of this will make all your problem disappear...
