Baked Ratatouille

When I first watched Disney's ratitouille movie, I didn't get the idea of why Anton Ego felt so emotional about a veggie dish prepared by rats. That was until I tasted one mysef - not prepared by rats of course!

Once you take a bite, you immediately feel the warmth surging through your body. A fresh taste just melts upon your tounge - You'll know what I mean when you try it.

[SERVES 4]

Ingredients:

1 Tbs Olive oil

2 Garlic cloves, chopped

3 Different colored bell peppers, diced

1 Onion, chopped

2 Zucchinis, diced

4 Tomatoes, chopped

3/4 Cup vegetable stock

1 tsp sugar

1 Tbs white balsamic vinegar

Salt and pepper for taste

1 Baguette, thinly sliced

125 g Goats' cheese with chives

Start by chopping all the vegetable ingrediets accordingly.

Prepare a nonstick frying pan with the 1 Tbs of olive oil.

Fry the onion, stirring it occassionally for 5 minutes, until lightly browned.

Add the garlic, bell peppers and zucchini and fry for an additional 2 minutes.

Stir in the tomatoes, vegetable stock, balsamic vinegar and sugar, then bring to a boil. Season with salt and pepper according to taste preference.

Transfer the cooked vegetables to an oven proof dish.

Cover the top of the dish with aluminium foil and bake in the oven at 190°C for 45 - 60 minutes, until vegetables are tender.

When vegetables are almost ready, toast both sides of the bread slices and pread the goat cheese onto one of the sides of each bread slice.

Remove the foil from the ratatouille dish, and stir the vegetables.

Top with the bread slices, cheese side up. Put the dish in a preheated hot grill for 5 minutes.

Spoon the ratatouille into 4 bowls, and top them with the toasted bread. Serve warm!
